That’s what I realised after staying here for a few days….

But when I first set foot in Alleppey, the first thing I noticed in Alleppey apart from the mesmerizing green and blue of the backwaters was the rhythm of the land. At dawn, the mist hung low over paddy fields that seemed to stretch forever, their emerald blades swaying gently in the breeze. Farmers stood ankle-deep in water, transplanting seedlings by hand, their movements slow but steady, as if in sync with the pulse of the earth.

Later that morning, Akoya Beach Villa’s chef pointed toward the fields. “That rice will be on your plate tonight,” he said with a smile. The villa felt like a home away from home.

Having a Feel of the Fields

The next morning, I followed a narrow bund road that cut through the paddies. The air smelled faintly of wet earth and coconut husks burning in the distance. Farmers waved as I passed, their hands stained with mud, but their faces lit with warmth. They spoke of njavara, a medicinal variety of rice grown here for centuries, and of red rice, the hearty staple of most Kerala meals.
When you finally eat that rice — soft, slightly nutty, and comforting — you realize why people here call it the soul of their cuisine.

The Kitchen Garden of Akoya Beach Villa

Behind the villa, a small garden thrived. Snake gourds curled along bamboo poles, drumstick trees stretched skyward, and bright chilies flashed red among the leaves. The chef bent down, snapped off a handful of spinach, and handed it to me to smell—fresh, green, almost peppery.  “This will go into lunch today,” he said, smiling.

By noon, that spinach had been transformed into a thoran, a dry stir-fry with grated coconut and a dash of mustard seeds. Simple, light, and full of flavor — hand-picked freshness you can taste.

A Spice-Laden Breeze

One afternoon, I visited a small farm not far from the villa. Pepper vines spiraled up tall trees, their clusters of green berries glowing in the sun. Cardamom pods hid under leafy plants, releasing bursts of fragrance when crushed between fingers. The farmer, an elderly man with weathered hands, told me his grandfather once traded these same spices with ships that came to Alleppey’s harbor. He gifted me a packet of spices.

That evening, when I tasted fish curry cooked with the farm’s pepper and turmeric, it was an unforgettable sensory euphoria. The spices weren’t overpowering — they were layered, deep, alive.

From Harvest to Plate

Meals at Akoya Beach Villa followed a rhythm as natural as the land around it. In the morning, vegetables and rice were gathered. By midday, they appeared on the table, transformed into avial, olan, or a fragrant curry. Nothing traveled far, nothing felt rushed.

One dinner stays with me: red rice served with Alleppey-style fish curry, beans thoran, and a dessert of warm payasam sweetened with jaggery from a nearby farm. Each bite tasted of place — of soil, sun, water, and the care of the people who grew it.

More than a Meal

Dining in Alleppey is a one-of-a-kind culinary discovery — the farmer planting seedlings at sunrise, the chef choosing fresh harvest from the garden, and the spices carefully curated, even mixed to arrive at unique flavors. By the time the meal reaches your plate, it carries the spirit of the land and the labor of those who nurtured it.

Here, “farm-to-table” isn’t a trend. It’s simply the way life flows. From paddy fields to plates, Alleppey serves not just food, but stories you can carry back home with you to tell your friends.
